Spaghetti squash. No spiralizers or kitchen gadgets needed here to transform squash into a fluffy plate of spaghetti. Once cooked, the flesh of a spaghetti squash separates into long strands that can, in fact, be twirled around your fork. And how does one turn a gourd into angel hair pasta, you may ask? It’s simple!
First, preheat your oven to 400 degrees. Carefully cut the squash in half and scoop out the seeds. The inside should now look clean and smooth. Lightly brush olive oil onto each side, and sprinkle with salt and pepper, to taste. Place the squash into a roasting pan with the face down. Cook for 30 to 45 minutes, until you can easily pierce a fork through the flesh all the way to the peel. Next, use a fork to gently pull the squash flesh from the peel and to separate into strands.
This spaghetti is nutritious, wholesome, gluten-free, and surely won’t be the first fare to break your healthy resolutions!
