Now that you’ve made spaghetti squash… you’ll need a hearty, full-bodied sauce to accompany it. It doesn’t get much better than this delicious turkey Bolognese. You’ll need:
• 1 pound of ground turkey
• 3 slices of bacon
• 1 medium finely diced yellow onion
• 1 finely diced carrot
• 2 finely diced celery stalks
• 3 minced garlic cloves
• 2 cups of crushed tomatoes
• Red pepper
To start, in a large nonstick skillet, cook three bacon slices over medium heat until crispy. Transfer bacon to paper towels to drain. Next, add 1 tablespoon of oil to your skillet. Add your yellow onion, carrot, celery stalks, and garlics. Cook until vegetables are tender, about 15 minutes. Transfer to a medium bowl.
Next, add 1 tablespoon of oil and 1 pound of ground turkey to your skillet and cook, breaking up the meat with a spoon until almost cooked through. Follow by adding your already cooked bacon and vegetables, 2 cups of crushed tomatoes, and a pinch of red-pepper flakes. Bring to simmer. When the turkey is fully cooked and the sauce has thickened, about 5 minutes, serve over spaghetti squash and sprinkle with salt, pepper, and Parmesan. With a quick turkey Bolognese, all will be satisfied.
