Swimsuit season is fast coming. Lucky for us, springtime offers plenty of help. Ranking among the world’s healthiest fruits is the gorgeous, plump and smooth apricot – in season now! The slightly tart fruit wears a vibrant, bright golden-orange uniform. A ripe apricot is brimming with nutrients, including beta-carotene, which helps keep eyesight strong and helps prevent heart disease. There’s nothing like biting into a cold apricot on a hot day, but for those of you who are still waiting for the weather to catch up with the season, try your hands at sautéed apricots.
To make, toss an apricot, halved and pitted, in a pan over high heat with half a teaspoon olive oil and a pinch of salt and pepper. Cook the apricots cut side down for a minute, until softened. Flip and cook for 30 seconds on the skin side, and plate. It’s delectable!
