As we enter June, many of you may not know, we also kick off National Mango Month! What is your favorite way to enjoy these beautiful golden gems? I like to drink my mangoes in a mango lassi.
Lassi is a popular traditional Indian yogurt-based drink, which originated in the Punjab region of the Indian subcontinent. While traditional lassi is flavored with Indian spices and salt, sweet lassi resembles a smoothie, and is blended with sugar. Here is my favorite recipe. You’ll need:
- 1 Mangos
- 1 ½ cups of Plain Yogurt
- 2 tablespoons of Honey
Dice your ripe mango and process in a blender until smooth. Add in the yogurt, honey, and a tray of ice. Process the mixture until the ice is crushed and the drink is frothy. Pour into a tall glasses, and garnish each with ground pistachio nuts. Exotic and delicious, Mango Lassi is great as dessert, but also terrific as a morning smoothie substitute. Makes 2 servings.
