As we enter into the warmer months, embrace the sun with a fresh, cold ceviche. There’s so much to love about this seafood-centric dish. Its simplicity aside, ceviche is low in calories, extremely filling, and when stylishly presented, a crowd knock-out. Keep it simple. You’ll need:
- 1 pound of fresh or frozen shrimp
- 8 lemons
- 8 limes
- 2 avocados
- 1 cup of diced tomatoes
- ½ cup of diced jalapenos
- ½ cup of diced red onion
- ¼ cup of chopped cilantro
To begin, cut your fresh shrimp into fourths and toss into a bowl with the juice of 8 freshly squeezed lemons and 8 limes. If you’re using frozen shrimp, thaw completely before cutting by soaking the shrimp in a bowl of room temperature water. Drain when thawed. Next, toss together your tomatoes, jalapenos, red onion and cilantro and add to the shrimp and lemon/lime juice mixture, gently stirring until all ingredients appear coated. Cover the bowl and refrigerate. 1 hour for frozen shrimp, 2 hours for fresh.
Before serving, cut up your 2 avocados into small cubes and toss with the rest of the ingredients. Serve with some fresh tortilla chips and that’s it! With just the right amount of citrus, spice and creamy avocado, you’ll be in ceviche heaven.
