Watermelon Feta Salad
- 3/4 cup extra-virgin olive oil
- 1/4 cup balsamic vinegar
- 1 teaspoon Minced Garlic
- 2 teaspoons Brown Sugar (Optional)
- Salt & Pepper
- 3 cups arugula
- 2 cups diced watermelon
- ½ red onion, thinly sliced
- 1 cup halved cherry tomatoes
- ½ cup feta, crumbled
- Sliced Toasted Almonds
- Mint Leaves
Cool down with a lovely summer salad. Now if you happened to miss the great watermelon bounty at your local market, allow me to inform you – watermelons are in peak season right now. What better time to make a refreshing watermelon feta salad?
To start, combine the arugula, watermelon, cherry tomatoes, and red onion in a large bowl. Crumble the feta cheese on top, and toss. Garnish with loosely diced mint leaves and delightfully toasted sliced almonds.
For the dressing, combine the extra virgin olive oil, balsamic vinegar, and minced garlic. Typically, good balsamic vinegar does not require sugar, but if needed, toss in 2 teaspoons of dark brown sugar. Salt & pepper to taste.
