There is a new trend taking the breakfast scene by storm. Overnight oatmeal is everything that instant oatmeal is not. It’s rich in protein and fiber, incredibly lush and supremely substantial.
To make, begin by boiling 1/4 of cup steel cut oats, half of a cup unsweetened almond milk, and a teaspoon of full-fat Greek yogurt. Let simmer for about 10 minutes, until your oats are soft. Mix in 1/4 cup of blueberries, 10 almonds, 1 teaspoon of stevia or sugar and a few dashes of cinnamon, nutmeg and vanilla. Store in a sterilized glass mason jar, and let cool with the lid off for an hour. Switch up the type of fruit and nut to make your oatmeal seasonal.
Once your breakfast reaches room temperature, seal the mason jar, and refrigerate overnight. The next morning, eat it cold, heat it up, or grab it to go. And feel free to experiment with different ingredients to create your perfect overnight oatmeal recipe.
