Any wine night can be enhanced by the flavors and aromas of good cheese. One of my favorite ways to enjoy cheese is in the classic Italian cracker, called a frico.
To prepare a fresh batch of fricos, preheat your oven to 375 degrees, and line 2 large baking sheets with parchment paper. Mix 1 cup of shredded parmagiano or asiago cheese with 1 tablespoon of flour. Then spoon the cheese mixture by generous spoonfuls onto the prepared baking sheets. Flatten, allowing approximately 2 inches between mounds. Bake the fricos until deep golden and crisp; approximately 10 to 12 minutes. Remove them from the oven, and voila!
You have delicate, crisp, Parmesan nibbles. Pair your fricos with a chilled Chardonnay or a hearty Amarone for an especially lovely marriage of flavors. Fricos – your wine nights will never be the same.
