Wake up on the right side of the bed. Frittatas for breakfast! You’ll need:
- 1 Tablespoon of Olive Oil
- 1 Clove of Minced Garlic
- 2 Cups of Grape or Cherry Tomatoes
- 2 Tablespoons of Chopped Basil
- 8 Eggs
- Salt & Pepper
To start, preheat your over at 400 degrees Fahrenheit. In a cast iron pan or nonstick skillet on medium high, add the olive oil and minced garlic. When the garlic becomes fragrant, toss in the grape or cherry tomatoes and sauté until softened. Season with salt and pepper before adding in the chopped basil.
Next, whisk together 8 eggs and pour into the pan along with the grated cheddar cheese. Reduce the heat to medium and cook until the edges have set, about 3 minutes. Transfer to the oven to finish cooking, about 7-8 minutes.
Invert or slide onto a plate before serving. This frittata is a breeze to whip up. Happy Better Breakfast Month!
