Loaded Mashed Cauliflower
Fall comfort, summer light. Did you know cauliflower makes a great light alternative to baked or mashed potatoes? Try this delicious baked cauliflower spread.
- 1 head of Cauliflower Florets
- ¼ cup of Sour Cream
- ¼ cup of Plain Yogurt
- 1 tablespoon of Salted Butter
- ¾ cup of Cheddar Cheese
- 2 tablespoons of Bacon Bits
- 1 tablespoon of Chopped Chives
- 1 teaspoon of Garlic Salt
- ½ teaspoon of Black Pepper
First, preheat the oven to 400. In a large saucepan, boil and soften the cauliflower florets. When tender, transfer to your CUISINART Food Processor and blend with sour cream, plain yogurt, and salted butter. When the mixture is smooth, mix in garlic salt, and black pepper. Transfer to a greased dish and top with Cheddar cheese and bacon bits. Bake for 15 minutes and broil for another 5 minutes for a golden crust. Garnish with some chopped chives and enjoy!
