Warm Asparagus Salad
Sprouts for spring! Spring welcomes an abundance of fruits and veggies, asparagus being one of my favorites. This perennial plant is a great source of antioxidants, vitamins A, C, E, and K, in addition to being high in fiber. Enjoy these hearty green spears in a quick warm salad.
- 1 pound of Asparagus
- 2 tablespoons of Olive Oil
- 2 Garlic Cloves
To start, heat up 2 tablespoons of olive oil in a large skillet over medium heat. Add in 2 minced garlic cloves and 1 pound of asparagus – stems peeled, if necessary. Cook for a couple of minutes on each side until they become a bright green and then season with salt and pepper. Transfer to a serving dish and top with a sunny side up egg, sautéed mushrooms, cherry tomatoes, pine nuts, or parmesan shavings also make great additions to this fast and easy recipe.
