Bitterness worth the benefits. Bitter melon is currently in season and I encourage you to give the popular Asian fruit a try. Low in calories and high in phytonutrients, this fruit pod is best enjoyed in a stir-fry.
- 1 pound of Bitter Melon
- 2 tablespoons of Vegetable Oil
- 3 minced Garlic Cloves
- 2 tablespoons of Soy Sauce
- 1 tablespoon of Apple Cider Vinegar
- 1 teaspoon of Sugar
- Sesame Oil
- 1 teaspoon of Chili Flakes (optional)
Halve, deseed, and slice the bitter melon. Salt the sliced melon and set aside for 10 minutes, draining out the excess water. In a large skillet on medium high heat, combine vegetable oil and garlic cloves. Add in 1 teaspoon of chili flakes for optional heat.
Toss in the drained melon and stir-fry until softened. Add in soy sauce, apple cider vinegar, and sugar. Cook for another minute and drizzle on some sesame oil. Transfer to a serving dish and enjoy!
