Oatmeal for Dinner
Breakfast for dinner? Over the last decade, sales of breakfast items have been increasing during the later parts of the day. The current craze? Oatmeal.
Oatmeal is great for snacking and even makes a great savory dinner! Its consistency is similar to that of a risotto, so next time try it sautéed with mushrooms, onions, and herbs.
- 1 cup of Oatmeal
- 2 chopped Garlic Cloves
- 2 tablespoons of Olive Oil
- 1 medium diced Onion
- 1 cup of chopped mushroom
- 2 sprigs of thyme
- 1/2 cup of grated Gouda Cheese
To make, prepare 1 cup of oatmeal the way you normally would. While that's cooking, in a large saucepan on medium low, sauté the chopped garlic cloves in olive oil. When fragrant, add in diced onion and mushroom. Cook until soft, about 5 minutes. Slowly stir in the finished oatmeal, the leaves of 2 sprigs of thyme, and grated Gouda cheese. Salt and pepper generously before serving.
