Corn on fire! Treat yourself this summer with some homemade street corn. Nothing tastes better than sweet corn with a good char.
- 4 Ears of Shucked Corn
- ¼ cup of Mayonnaise
- ¼ cup of Sour Cream
- ½ cup of Feta Cheese
- 1 teaspoon of Minced Garlic
- ¼ cup of Chopped Cilantro Leaves
- Chili Powder (Optional)
Get your grill started and while it’s getting toasty, mix together your mayonnaise, sour cream, feta cheese, minced garlic, and chopped cilantro leaves (save a little for garnishing). When the grill is hot, place 4 ears of shucked corn on and let sit. Rotate the corn occasionally and continue cooking for about 8 minutes. When it’s cooked through, move the corn from the grill and coat evenly with the mayo-cheese mixture you made earlier. Transfer to a plate, garnish with more cilantro leaves, and serve with some lime wedges. For an extra kick, top off with chili powder.
