Mount Gay Rum South Side Cocktail

1 1/2 oz Mount Gay Eclipse Rum
1 oz fresh lemon juice
3/4 oz simple syrup (or 1/2 tablespoon superfine sugar)
Half a dozen fresh mint leaves
Club soda

Method: Muddle mint, lemon juice and simple syrup until mint flavor has been released. Divide ice and rum evenly between each glass, add lemon mint mix and top off with club soda. Garnish with a lemon twist, if desired.
